When I think of gourmand fragrances, vanilla is usually the first note that comes to mind. But lately, some of the gourmands catching my attention go far beyond the typical sweet vanilla fragrance.
Think espresso and rum, freshly baked madeleines, red velvet cake, ginger biscuits, buttercream and dark cherry. They still have that addictive, almost edible quality gourmands are known for, but with spicy, fruity, floral and woody notes that make them a little more interesting—and perfect for fall.
As someone who has been leaning more into gourmand and ambery floral fragrances lately, I’ve been paying close attention to the scents I want in my fall fragrance collection. Some I've already discovered and loved, while others are currently on my list to try.
Here are eight gourmand fragrances worth having on your radar this fall.
- Kilian Paris Midnight Espresso

If your fall drink order usually involves espresso, start here. Kilian Paris takes the richness of coffee and pairs it with rum, chocolate, hazelnut and Bourbon vanilla for a fragrance inspired by the indulgence of an after-dark cocktail.
Midnight Espresso is one of the fragrances from Kilian's Cocktail Collection that immediately caught my attention. Coffee already works beautifully in fragrance—I love the mocha coffee and vanilla notes in Kilian's Intoxicated—so a fragrance centered around espresso, chocolate and rum feels made for the colder months.
For anyone who prefers their gourmands dark, boozy and rich rather than sugary sweet, Midnight Espresso is one to put on your fall fragrance list.
2. Dolce & Gabbana Devotion Eau de Parfum

I actually discovered Dolce & Gabbana Devotion after visiting the brand's pop-up for the launch of Your Devotion, and it quickly earned a spot on my fall fragrance list.
Launched in 2023, Devotion combines candied citrus with orange blossom and vanilla, giving gourmand fragrance a brighter twist. It's sweet, but the citrus and orange blossom keep it from feeling like a straightforward vanilla fragrance.
I've also noticed myself gravitating toward orange blossom lately, which may explain why Devotion stood out to me. If you want a gourmand that still has sweetness but feels brighter than some of the heavier coffee, chocolate and spice fragrances we tend to associate with fall, this is a good place to start.
3. Maison Margiela Replica Afternoon Delight
**Notes: Bitter almond, angelica root, madeleine accord, carrot heart, ambrette and sandalwood**
Maison Margiela's Afternoon Delight takes the bakery-gourmand route with a fragrance built around a madeleine accord.
The French cake inspiration alone makes this one intriguing for anyone who loves fragrances that pull directly from desserts and baked goods. Bitter almond accompanies the madeleine accord, while ambrette and sandalwood add softer, warmer elements to the composition.
If your ideal gourmand sounds less like a bowl of vanilla ice cream and more like stepping into a bakery for an afternoon pastry, Afternoon Delight deserves a spot on your list to smell this fall.
4. FORVR Mood I Am Her
**Notes: White pear, red velvet cake, vanilla bean, Turkish rose, patchouli, oud and musk**
Red velvet cake in a perfume? Say less.
FORVR Mood's I Am Her is one of the more unexpected gourmands on this list because its dessert-inspired notes are paired with a much deeper base.
White pear and red velvet cake lead the fragrance before vanilla bean and Turkish rose enter the composition. Patchouli, oud and musk round out the base. On paper, it's an interesting contrast: you get the familiarity of cake and vanilla alongside notes we typically associate with richer, woodier fragrances.
If you're intrigued by gourmands but don't necessarily want something that reads as pure dessert, I Am Her offers a different way into the category.
5. Jo Malone London Ginger Biscuit
**Notes: Ginger, nutmeg, cinnamon, caramel, roasted hazelnut, tonka bean and vanilla**
Few fragrance note lists scream "fall" quite like this one.
Jo Malone London's Ginger Biscuit brings together ginger, nutmeg and cinnamon with caramel, roasted hazelnut, tonka bean and vanilla. It's essentially the fragrance equivalent of the warm, spiced baked goods that start appearing as soon as the temperature drops.
This is also why Ginger Biscuit stands out among the other gourmands on my list. Instead of relying on vanilla alone to create warmth, the ginger, nutmeg and cinnamon bring in the spice we associate so strongly with fall.
For the person who wants to fully commit to cozy-season fragrance, this is the one I'd smell first.
6. Influxious Well Loved
**Notes: Cardamom, apricot, Nigerian ginger, magnolia, tuberose, buttercream, cashmeran, vanilla, shea butter and amber**
Buttercream immediately got my attention here, but it's the ingredients surrounding it that make Well Loved particularly interesting.
Influxious pairs its sweeter notes of buttercream and vanilla with cardamom and Nigerian ginger, along with apricot, florals, cashmeran, shea butter and amber.
That combination puts Well Loved somewhere between a spiced gourmand and a creamy floral. If you love the idea of buttercream and vanilla but want something with more dimension than a traditional dessert-inspired scent, the cardamom and ginger make this one worth discovering.
7. Prada Paradoxe Sweet Chemistry
**Notes: Blackcurrant syrup accord, orange blossom absolute and neroli milk accord**
Prada's Sweet Chemistry takes gourmand in a completely different direction.
Rather than coffee, chocolate or baked goods, the fragrance centers around blackcurrant syrup accord, orange blossom absolute and neroli milk accord. The syrup and milk references give it that gourmand connection, while orange blossom and neroli bring florals into the mix.
And there's orange blossom again—a note that keeps showing up in fragrances that have caught my attention recently.
For someone who likes fruity florals but wants to experiment with gourmand fragrances, Sweet Chemistry could be an interesting bridge between the two.
8. KAYALI Lovefest Burning Cherry | 48
**Notes: Burning cherry, raspberry, praline, palo santo, guaiac wood and patchouli**
Cherry has made its way from fashion into beauty and fragrance, but KAYALI's Lovefest Burning Cherry | 48 isn't built around cherry alone.
The fragrance pairs burning cherry and raspberry with praline before moving into palo santo, guaiac wood and patchouli. That combination gives this gourmand a darker direction than the cakes, cookies and creamy notes elsewhere on this list.
It's also a good example of just how broad the gourmand category can be. A sweet fruit like cherry can take on an entirely different personality when it's paired with praline, smoke and woods.
If you're looking for a fall gourmand but don't necessarily want to smell like a baked good, Burning Cherry may be more your speed.
Gourmand Is Getting More Interesting
If there's one thing putting together my fall fragrance list has made clear, it's that gourmand doesn't have to mean smelling like straight vanilla.
Give me espresso and rum, candied citrus, madeleines, red velvet cake, ginger biscuits, buttercream, blackcurrant syrup and burning cherry.
Some of these fragrances are already part of my gourmand discovery journey, while others are still on my list to smell and potentially add to my collection. And that's part of the fun of building a fragrance wardrobe: figuring out which version of gourmand actually feels like you.
This fall, I'm looking for something sweet—but with a little more going on.
